Hünkar Beğendi Ingredients (for two servings): For the meat: 1 lb cubed lamb, beef or chicken 1 onion, peeled and finely chopped 1 garlic clove, peeled and finely chopped 2 tomatoes, either grated, or peeled and chopped finely 2 tbsp butter 2 tbsp olive oil 2 tbsp tomato paste 1 green bell pepper, sliced in big chunks (remove the chunks before serving) 1 small cinnamon stick (remove it before serving) 2 bay leaves (remove them before serving) Salt and black pepper to season 1 cup hot water For the Eggplant and Béchamel Sauce 3 globe eggplants 4 tbsp butter 3 tbsp flour 1 cup milk ½ cup mixed shredded cheese (mozzarella, asiago, mild cheddar) Salt, black pepper and nutmeg to season
